You should be absolutely fine with a 670 or 7970 - both will OC nicely if required, and will be a good pairing with an OC'd 2500K.

As Parge says - no need on the RAM from a performance POV, but...

Screen res on new iPad is brilliant, iPad mini same res as iPad 2. Both are excellent, IMHO.

If the res is important, I'd go new iPad, but if not, iPad mini is a cracker.
