The 2nd lay out you could go for a narrow wrap around desk similar to the pic. At least that way you have more desk space length ways and 2 monitors would fit.

Going with 5 is a good idea, as said it will be much more rigid. The other plus is that it will be a lot easier when it comes to glueing or screwing it all together.

Yeah 1.55mm will be plenty for what you need it for. Bigger is always better. But 0.05 is like one strand so wouldn't make any difference.
