Are you satisfied with current performance levels? No one can answer that kind of question for you but your current rig should still max nearly everything.
Mate, unless your minted ... dont bother. Did exactly the same thing very recently and feel like a bit of a knob know. I too had a 750 blah blah blah did exactly what i wanted it too, OC'd to 3.83 and it was just great. Agree the 2500k is quicker WHEN i encode but tbh its pretty much the only time i notice an improvement. Yes it is a better CPU but to lay out a **** load of cash for it is a total waste imo. Trust me i have learn a very expensive lesson here. Spend some of your hard eanrt cash on a new Vertex 3 and a better video card.
Get yourself a 30 inch monitor and 2 GTX 580's There's always room for improvement It's whether you have the brains to know when enough is enough that matters
Never heard of your PSU, maybe thats something you could change but even with SLi 460's you wont need an 850watt. Just a quality 650w would be fine. If you can and want to though an SSD upgrade would be a good place to start IMO.

Are there any games you can't max with your current card? It seems mad to upgrade at the moment, what with games consoles refusing to die and freeing us to have pretty games.
The 560 is only 10 percent faster then the 460 and about 100 bucks more last time i checked so not worth it
Get an SSD, maybe get a couple of those samsung drives before they get sold to seagate. I'd upgrade to a 2500k, but I just happen to like as much CPU power as possible. Tbh everyone's already said it, what do you want to see a difference in?
As others have said, a SSD will be your biggest improvement. I would also consider another GTX 460 and a better PSU if you need more gfx performance
