    Reverse seared?

    Please don't tell me, I'd rather not know.

    Did you do it on a barbecue of some sort to get the reverse sear, or did you use an oven?

    I don't have quite the range of equipment, so I make do with this;

    Salt/apply rub ~24 hours prior to cooking, leave in fridge.

    Remove from fridge ~1 hour prior to cooking, pat with kitchen towel to remove excess liquid

    Oven until internal temps are right (GF likes medium rare, I like bleu, so there's some.. Juggling)

    Whack into the cast iron pan, serve/eat.

    It's probably not "right" by a chefs standards, but it works for me and I get predictable results!

    I have been inclined to think that Amazons customer service has been going down the tubes of late given the service I have received over the phone with the hard to understand Asian reps.
    But I have just returned from the post office where I dropped off two of my good ladies unwanted Christmas presents and I find that I have been credited with the cost of the item. I am assuming that Amazon have some arrangement with the PO that lets them know when a particular returns label has been used.

    Lets hope the RMA to Boots goes nearly as smoothly.

    One of life's modern pleasures, setting up a new phone. Missus has just received a Moto G 4th Gen but of course it is handed to me as soon as package has been opened to do the necessary.

    No doubt she won't answer it as the ringtone is ever so slightly different and thus she doesn't acknowledge it as her phone...

    I made pies with turkey and ham in white wine sauce and it was good. Feels like I was working on them all day

    The filling was totally encased in pastry as well, none of that top a bowl with a bit of pastry rubbish. That's carry on is a total cop out.

    I fixed my Surface RT 64GB with a broken Surface RT 32 GB, I replaced the battery & the charging dock.

    I am about ready to publish my second simulation race car (WIP), a little later.

    This mod was originally project titled "beautiful lines", Take a look and you will be one of the first in the world to see her in game (shots). :thumb:

    Hope to really deliver on the drive experience as per the first project.

    Thanks. The only problem is there is no one around to share the pies with. So I literally ate all the pies. Ah well, diets starts in the new year :rolleyes:
