What is the benefit of having everyone in a single workgroup? Is it just that it's easier to browse through computers, and "organize" a big network better? Or is there an additional benefit that only computers within the same Windows workgroup can utilize?

No benefit whatsoever as far as I know. It's very much a hangover from the "Windows for workgroups" days. There's no security boundaries around a workgroup or anything useful like that.
