I would say SimCity 3000 earns a spot somewhere down that list, if only because it's never too addicting to build a city out of scratch. And the variations of said city, imagine a farm-based metropolis, yup only SC3k.

I have played the FreeSpace series countless times. These are deffinetlymy number 1.
Starcraft, Starwars Racer and Fallout 3 have also given me many long nights.

Oh, and Age of Empires 2.

I would say Joint Operations:Typhoon Rising especially when there were 100 member servers running and having upto 30 members on Teamspeak playing in the same team.

Hmmmm, Not sure I could narrow it down to just one game!

Dizzy (Amstrad [the floppy drive version!])
    Sonic 3 & Knuckles (Megadrive / Genesis)
    Gran Turismo (PSX)
    C&C Red Alert (PC)
    Worms United (PC)
    Goldeneye / Perfect Dark (N64)
    Starcraft (PC)
    Gran Turismo 4 (PS2)
    Counter-Strike / Source Version (PC)
    Battlefield 2 (PC)

Red Alert possibly my all time fave...
