560Ti if you can afford it...benchmarks pretty much sum up the difference
i used one previously...it was fine. But CPU intensive games really like OC'd 2500's at least :) There is a difference to the feel.

2500K, Corsair Vengence 2 x 4Gb 1600mhz, and Asus P8Z68-V (or Gigabyte Z68X-UD4)
both boards will clock well..the RAM is decent without getting...
also...think youll find the 580 as being quite a bit faster in most games than the 6970 (according to anandtech anyway)...
MSI TF3 or saphire toxic if yu can find for a decent price
