What are the main differences between the MP and the XP apart from price, all i have seen so far is that the MP is aimed at servers, they both have 384k total cache are the core sizes different as well?

And info on performace differences as well, cheers

There is no difference at all between the cores of the two chips. MPs are certified for dual operation, and have their L7 bridge set appropriately, whereas XPs are not certified for dual operation, and have their L7 bridge set appropriately.

couldn't you possible change the setting using a silver conductive pen or a pencil?

so basically two MP's might give a slightly better performance than two XP's

No batsman, performance is the same because the core is the same. Stability is the issue.

Appropriate work with conductive paint can indeed turn an XP into an MP. However, since the XP chip was not certified for dual-operation, all this does is makes the bios think that it's an MP chip. Some dual-board bioses will not allow XPs to run dual, thus this is necessary.
