the XT has more pipelines (16 as opposed to 12) and is clocked higher too i believe. I think its worth the extra cost but the trouble I dont know where you can actually get your hands on one at the moment.

If you manage to find one then can you let me know where you can get it.

The X800 XT PE is clocked at 520/1120MHz
    - has 16 rendering pipelines
    - 256MB GDDR3 on a 256-bit memory interface
    - Peak Fill Rate - 8320 Mpixels/sec
    - Peak Memory bandwidth - 35.8GB/s

The X800 XT is clocked at 500/1000MHz
    - has 16 rendering pipelines
    - 256MB GDDR3 on a 256-bit memory interface
    - Peak Fill Rate - 8000 Mpixels/sec
    - Peak Memory Bandwidth - 32.0GB/s

X800 PRO is clocked at 475/900MHz
    - has 12 rendering pipelines
    - 256MB GDDR3 on a 256-bit memory interface
    - Peak Fill Rate - 5700 Mpixels/sec
    - Peak Memory bandwidth - 28.8GB/s

The majority of X800 XT's sold by retailers are actually X800 XT PE's so check the clock speeds before purchasing
