I need a fan controller like the hardcano 12, but goes up to 120 degrees C. Is there one, or can i mod the probes to make it that way. I want my alarm temp to be at least 100C

I believe you'd ahve to look for an industrial one - most ones that I know of are for computers and would only go up to say...75C, not even?

    make your own:
buy a thermistor and get a u-controller to measure the voltage drop across it, thus measuring the resistance, and thus measuring the temp of whatever its on top of.

there might even be a specialized IC to do this for you instead of a u-controller
