Just a quick note (aside from herbs are an excellent suggestion) make sure you don't bank the earth up past the damp course on your wall, that would be not good.

Probably avoid mint entirely to be honest.
I'll curve the soil down to ground level when close to the house. Highest point will be where the stump is. The garden walls should have no problems coping with containing half a meter of soil.

As for where to get plants, try online places like Crocus, Coblands etc. If you want to buy in person, look for a local garden centre, but you'll still probably get a better selection online.
