Wonder If this could be done with some arduino or Corsair magic
Not just safety (double-insulated is a thing even without grounded outlets): a switch-mode PSU is basically a very high power RF noise generator, and not something you want operating unshielded inside your case.
I think Pis are more appropriate. HDMI is the go-to for large numbers of pixels over a fistful of GPIO pins.
Some PSU brands (unsurprisingly just ones you should never allow near a PC) actually used to sell ones with windows in the case like for example this:

Well, I took my car through the car wash, and it was upgraded with RGB LEDs on everything. Felt like I was driving through a rave.

Rgb... takes me back to the days when your case looked like an aquarium with a cold cathode light in. It looked **** then, it looks **** now, bring back beige boxes, bah humbug.
RGB has definitely gone to far. You need to watch this even if you don't like the guy.
