I have slowly started to replace my kitchen accessories, cuttlery and crockery with proper (often Ramsay Signature series) products. Part of that is replacing knives... I am likely to never buy a cheap knife again since I discovered Wüsthof. Good enough for ceelebrity chefs = more than good enough for me...

There are other manufacturers that are as good, but since we can only get Wüsthof out of all of them, I can't judge those others.

It might be worth seeing if www.japanesechefsknife.com Deliver to your country. They do some absolutely amazing knives and they have a flat rate of $7 international shipping. Last knife I bought from them got from japan to north yorkshire, and delivered to me in less than 80 hours. If you want something more blingy, with a fantastic core steel, that's easy to sharpen and lovely to use then check out the Inazuma line in their specials, not much more money than a wusthof, but if you have the equipment to care for your knife properly, then well worth the little extra outlay. I use my 24cm Gyuto every day at work, my old Wusthofs have come home with me so they can get a bit of love.

All that said, the Wusthof santoku is a very nice knife, did you get the one with the scalloped edge? Definitely my favourite wusthof, just because it doesnt have a huge bolster, and is very thin. Takes exceptionally well to a diamond steel too.

Got me a little carried away there! I love my knives. Should maybe start a thread.

by "scalloped edge" you mean the one where the blade has the little "no stick indents" in it? then yes...
    to clarify: this one:
    http://www.wusthof.com/isrenderinge...pg&instanceid=wuesthof&templateid=detail_zoom

Now I need to figure out what I am making for dinner tonight... must use the knife... :p

Personally, I am not a fan of most of the knives ont he japanesechefsknife site... too blingy.

    I kninda dig these:

but have no idea how good or bad they are.

That's the one, or near enough. The indents in mine don't meet the edge, but sit about 3mm from it.

Whenever I get a new knife I like to give it the minestrone test. This way you can see how it handles onions, tomatoes and harder root veggies in one lot, and having to give it a nice fine dice really lets you see what it can do. Obviously you wont be making 40 litres of the stuff, but it's still a nice way to bed the knife in.

And I fully agree with you on the blinginess, they can go a bit too far. As most of mine spend their lives in a professional kitchen blingy isn't really a virtue. If you do find yourself desiring Japanese steel, try out the JCK kagayaki carbonext, or the Tojiro DP if you can get them in your country. Amazing knives for the cash, and with a similar handle feel and build quality to your wusthof.

Those black knives look very odd indeed, handles look as if they'd have a similar feel to globals but the edge profiles are some way off ideal. Would make a cool gift though, if they werent so expensive!

the pic's deceiving... the indents don't go all the way to the edge.

Those black ones I'd only want to put up as ornaments... LOL

Shouldn't be too dire, I find that the explorer/les paul shapes suit me. I'm after it mainly for rhythm work so i'll have it slug quite low.. I'd rather it was a fixed bridge, but I'll make do with a Trem.

That, and one step closer to being James Hetfield..

Bought quite a lot of stuff over the past week for my awesome new room in college at uni, with entrance/hallway, large main room with dining table and small side kitchen and decent sized separate bedroom :D. Also has access to the college battlements on both sides and has windows out in 4 directions, though rather low doors and beams if your over 5ft10 (I fit perfectly).

Some boring things like glasses, work surface mat for the kitchen etc. but also samsung 830 256 gb (might actually have space for a few games on ssd now after filling up my 120gb ssd rather quickly) CM storm quickfire rapid mechanical keyboard (so nice to type on), logitech wireless numberpad, razer deathadder left handed mouse (logitech mx610 a bit old and battered), razer sacrab mousemat and some fairly basic sony speakers (sony srs a3b).

Will get some pics up on the room + computer thread once all arrived + arranged.

Yep they're handbrake compensators, modded ones to prevent a common stretching problem on 75's & ZT's, bloke sends them out, you send old one back to him to mod for the next forum member.

\o/ MBP Mid-2010 for £470! Not the most cared for example, but not too bad - nothing wrong with it bar half a dozen minor dings and some slight scratches. I've just bunged an ssd in. I'm itching to get Win7 installed so I can swipe between OS's.

Sandstrøm wireless headphones (they were the only exchange alternative from the **** pair of Sony ones, which produced a constant "hissing" sound). Rather impressed after a week, working well, stylish enough. They do have a problem with signal breaking up a little when the signal goes through a thick wall. Also, do not put wireless headphones next to the wireless router, decreases performance of both

Finally made a purchase that could be worth posting! Managed to snag a pre-sale ticket to see The Joy Formidable at Hendre Hall in Bangor, they're doing a couple of tiny shows before joining Muse for their UK arena dates. Can't wait. :D

Now I just need to wangle a ticket for Hundred Reasons' upcoming farewell tour - their supports are Hell is for Heroes, one of my all-time favourite bands, who are going to do all of their best album.
