I've done this a few times on cpus that ran hot, the only difference was that as PeteJ mentioned, I completely filled the center of the socket, to ensure the back of the cpu made contact with the grease, and added a rear heatsink, and a rear fan. Don't knock it till you try it noobs

It wouldn't really be worth doing under water cooling, and back then heatpipe based heatsinks didn't exist either, so doing this, along with a small fan creating airflow on the rear of the cpu socket, would reduce cpu temps by at least a few degrees
Why? You are cooling the hundreds of pins which are all contacting the cpu's pins with the assistance of the grease = at least 1% drop in cpu temps, which can easily be a few degrees!

As PeteJ mentioned, filling the center helps a bit more, as you are creating heat transfer from the rear of the cpu to the mobo! Try it and see another ~1% cpu temperature drop.

I went the next step further a few times, by whacking on an old low profile heatsink on the rear of mobo's or even on the rear of gpu's, with small spacers in the corners, to prevent the heatsink from shorting out all the pins, and a heap of thermal grease of course to seal the deal. I'd use stuff like old PII or the standard chipset or gpu heatsink, etc.
Adding a rear heatsink reduces temps of the chip and board by at least another 1%.

TL;DR: it's a way to reduce temps by at least 3% in an aircooled system = higher OC potential on air /geekout
