All in the RAW converter in PS. Great tool that I tend to overuse.

I'd love to know how you manage to pan with a car to make it stay in focus as you can't actually look at it through the view finder.

 

Thats the art of it

Camera does the focusing! Its AF-AI, as in, godmode. Half press on something, and while it moves, the camera will keep it in focus.
1/40s, which the slow shots were taken at, isn't that slow in reality. Just keep steady, the car is only going "that way" anyways. So its easy to predict.

Slight ramble there...
