Well that really depends on what kind of money you're looking to spend. The i5-750 is a quad core which can be easily overclocked to 3.33ghz and beyond, so is obviously the better choice there. Two GTX 260s are easily going to beat a GTX 285 in terms of power. That PSU is overkill in terms of wattage, I'd say. You're never going to need 1000W even when you're running SLI. I'd say about 750/850w should do the trick there, but I've never run an SLI/Crossfire rig so other people can advise better on it. As for the motherboard ... either should be fine, just make sure it supports SLI and maybe look up reviews on them to make sure they're viable.

I've never been prouder! My first signature appearance! And yeah, save a lot of money for the GPU. If you don't spend it all, you've got something left over at the end, which could go towards an SSD, or water-cooling. If you don't save enough, you'll be gutted.
