I can tell you this, as both of mine were watercooled. In game mine used to hover around the 55C mark. I had two EK 240 XTXs (60mm thick), and my 2500k in the same loop. The heat used to absolutely pour out of the top of my case, it was amazing!
If anyone is going to buy one i would say give it a week or so for the R290 to turn up and to see what the prices will do especially with the GTX780
It may be £430 now but add a custom cooler and some pointless X's and various words like "toxic" to the name and il bet you will be pushing £500. Thing is Nvidia got it right first time. Much the same as the patching debate, companies are putting products out that are not completely finished then releasing an "X" version that fixes all the issues. Never mind those who supported them buy buying their half built hardware on release day... IMO its not ok to put out something that can barely do its intended function. Id hazard a guess that the AMD board meeting went something like this: AMD GUY: Any ideas on how to make this card awesome? Random AMD research guy : Well the fan is rather noisy and as our card runs very hot maybe we should sort the cooling out? AMD GUY: Sod that, we will just tape on an aging cooler and let the hardware partners do the hard work by fixing our shoddy cooling. that way we can get it out early and try not to lose any more money.... Random AMD research guy: But we really should try and make it more power efficient surely? AMD Guy: how about we clock the card down to safe levels and call it silent mode? Ok so maybe not quite like that but you get the idea Remember the Nvidia 5800 Ultra? seems like Nvidia learned from their mistake...

So you need to spend another £80 on the 290X to get it down to decent temperatures? Awesome! Suddenly AMD's price effectiveness goes out the window. Actually, I wish they had invested some more money, and made the card cost more, by putting a cooler similar to the Titan/780 on there. Sure, you'd lose some of the wow factor of the price/performance ratio, but user experience would be better.
