    For the life of me I simply cannot find out how to forward a users email to an external address without setting up a server side rule in outlook.

    This is a pain in the arse if you just want to do something like:
    joe@ourdomain.co.uk -> joebloggs1454@hotmail.com

    Anyone know a better way?

    you need to set your external address up as a contact in Active directory then on your user account choose properties and under exchange advanced there's a mail forwarding button,

    I think ... but I've not got a server to check on, should be fairly simple to set up anyway.

    Set up a new OU called something "external forwarding addresses" (or something like that) in Active Directory(optional).

    Create your external mailing address in Active Directory as a contact.

    Then right click on the user account you want to forward mail to that address and

    Select username->right click->properties->Exchange General->delivery options->forwarding address

    :)
