I installed a Via 1gig micro itx system and touchscreen lcd into my friends 97' Jetta.
The via is run off a DC-DC 150w powersupply and the lcd runs off that same powersupply as its only 12v.
The PC is hidden in the trunk in a custom plexiglass case and the lcd was custom fiberglassed into the dash by me. It runs pretty well.

What you could do is use a 300w inverter on a normal powersupply.
    I have full pics.
