That's a kickass birthday present and sounds like a pretty kickass girlfriend. Have fun with the new toys, looks like you've got a really good setup planned...

No, there shouldn't be any problem with it if you use distilled/deionized water with something like water wetter.

you can safely mix metals (ie. copper and aluminum), swiftech does that with their blocks, however, that increases the risk of galvanic corrosion, so a corrosion inhibitor needs to be used. the aluminum top should be anodized, which is a protective coating, but you still need the additive. water wetter might be ok, although I've heard good and bad about it (it has a tendancy to leave white crud on the tubes and other surfaces in your loop), if you plan on using it for its anti-corrosion properties, you'll have to use a lot for it to effectively protect your loop. i'm pretty sure that the concentration of Swiftech's additive was reccomended to be around 25-30%, just some things to think about.
    *edit*
i'd suggest checking the documentation that came with the waterblock, or checking D-Tek's website for what they suggest to prevent corrosion.

i believe swiftech recommend 5% HydrX .... though getting hold of it may not be easy as i don't think there are any UK sellers (yet - think overclock.co.uk might be going to get some on their next shipment)
