    Surely both the chemist and the plumber would pronounce unionized the same as the chemist would use deionized...

    no, theres 2 versions there

    deionized would be something with the ions removed,
    whereas you'd could have unionised sample > where it hasn't been converted into ions. (e.g. mass spectrometry, some of the sample may remain unionised (as you need to ionise the samples in order to shove them down instrument))
