Outlook stores its information (contacts, email) in a file known as a PST file. The default file is "Outlook.pst".

It can usually be found in:
    C:\Documents and Settings\%username%\Local Settings\Application Data\Microsoft\Outlook

It is usually a good idea to backup that entire folder.
