GPU's are an absolute disaster at the moment - you might be wise to upgrade all the other components now and grab a second hand GPU bargain once the coins inevitably crash or become unprofitable to mine. I cannot fathom paying £275 for a 1060 when I picked up a £155 RX 480 just a few months ago. Even though the RAM is expensive now, it is still climbing in price. Unless you want to wait a year, best to suck that up, I reckon.
At £110 for 16gb 3000 the ram is not bad. It was around £100 before the hike, so it is coming back down. Ryzen 1700 is £280 on Amazon, again fine. As are board prices. The B350 Strix is £118, superb value for coin. GPUs? I would just wait. Get the rest, then add that later. I found a 1080Ti for £600 today, almost felt like amazing VFM tbh.
