Is there a specific brand that works well, or just plain ol' polish?

I probably wouldn't use polish on the bottom of the waterblock, it's likely to hurt more than it will help. If the copper is tarnished I use vinegar and a toothbrush. Or if it's really bad I just lap with some high grit sandpaper.

    Ketchup!
(It has vinegar in it, etc etc, like what Rocket suggested)

Ketchup is recommended for cleaning copper bottom kitchen cookware. Must work.

Lysol Toilet bowl cleaner. It works great for flash-cleaning copper and brass. More than 10 seconds will cause it to turn red though.

We will bump Langer when he gets back from his Grand Father's funeral. He has more copper experience than most. Smart dude for one so young.
Prometheus has copper falling out of it. Copper sleeving?
