Is it possible to have two Nvidia cards in one PC and not setup as SLI?

The two cards are GTX 265 and GTX 570.

Would I have to disable the one I am not using?

Sure, you can have any ammount of video cards in your system at a time.
They just won't be working together, so if you play a game on the monitor hooked up to the gtx570, then only the gtx570 will be procesing your game, the gtx265 will stay idle.

I'm thinking about this because of the driver timeout I'm getting in one or two games. I never had any of this with my GTX 265, so I was thinking if I could install both cards with separate monitors then either select which graphics card in game or disable the card I'm not using.
