    Purely for gaming my rig.

    i7 920 C0 @4.0 Ghz
    corsair xms3 1333Mhz 3x2Gb underclocked at 1140Mhz
    gigabyte ga-x58-ud5 rev 1.0
    Evga GTX 260 SCC
    WD Caviar Black 640 x 2 Raid 0

Also have a intel xm25 160gb in my laptop which I could put in desktop.

    Have about £400-500 to spend.

What would give me the best performance increase? Worth investing in better RAM?
    Cheers.

Why have you underclocked the RAM? I'd look at sorting that.

    What PSU are you running?

Ram is underclocked because of the CPU multiplier.
PSU is Be Quiet! Dark Power Pro 650W

My thoughts too. Sell the 1333MHz. Get a GTX570 or 6970...

I wouldn't bother changing the memory, as it really doesn't make a difference when it comes to performance. Go have a search and you'll see what I mean. The biggest performance increase that you will get is by upgrading the graphics card. What resolution are you playing at, and what games?

On a i7 there will be a speed bump, the bandwidth difference will be large.
