I would be going with the Dalmore as well. Although the Aberlore 16 year is another fine whiskey. I would always "nose" the whiskey first before adding a dash of distilled water and "nosing" again. If you add water it opens the whiskey up. I never use ice it just masks the flavour. If the whiskey is under 12 years old i would always add the water as it removes the harshness.
