Will be looking at using 4GB DDR3 on win 7 32bit and probably a little £25 GPU. Or has anyone got any better suggestions?
That should be fine for minecraft, I've built a media PC from one of those exact boards- plays 1080p video just fine. You could always get one of those and add a dedicated GPU if necessary.
If you could spare £20 more, you would get more than double the CPU performance with an Intel Celeron G530 setup (or G540/G550 depending on the prices). Any cheap H61 board should do for that, unless you'd like SATA 6Gbit/s, for which you'll need a B75 board. I'm not sure how the onboard Intel HD2000 graphics solution copes with Minecraft though.
