I always mash the power and reset buttons when my computer goes slow or freezes but now it won't start up at all, no lights or fans or anything, what bit have I broken?

Sounds like a PSU issue to me. Take a look at your motherboard - if it's receiving power, there is usually a LED lit up. Then, I'd say use a spare PSU to test the PC. If there's still no POST, evidently something else is wrong. EDIT: Longweight is probably right. I'm a moron.
I'm not sure if I should be poking around with the Psu without knowing what im doing, is it possible I've corrupted something on the hard drive by turning it off before it's sorted itself out?
Yes but that wouldn't cause the system to do absolutely nothing when you try and start it up. You could short the cables that are the power switch to see if it is the switch that is dead.
Well, easily the safest thing to do it switch off the power before messing about. Only switch on the power when needed, which should remove the greatest danger. Ground yourself too before doing anything.
Once it's fixed, see why your computer is freezes and/or slowing down (unless it's XP.... that's a bit expected for that OS).
