Just my 2 cents: I used to service arcade machines, I would probably go to a distributor (I used betson in king of prussia, pa as I have access to a corporate account). I don't know how much Ultimarc costs however I would be inclined to build my own PC interface for all the controls, since I have the electronics know-how to do such a thing. Otherwise, a great project! I have always wanted to make an arcade cabinate to run old arcade games, but I've never found room in my budget or schedule to do such a thing. BTW those plastic coin acceptors are not very tough... after some use you'll find they break, I prefer the metal ones as they seem to hold up better.
