About the pictures, its much more easy then you think !
You surface where you put the products on is a wood with a clear coat. That coat is reflective, meaning the flash will be enhanced but arrives at a later moment in the camera which needs to adjusts it settings causing a defocus I think. Best is to use a white of black/dark surface which doesnt reflect.
What kind of camera do you have ?
